It has been called the world’s perfect food, the “love drug,” and a “gateway coffee drink.” In this course, we explore the science, history, and economics of chocolate (and cacao) to learn how it has become a nearly-$160 billion business, and has swept around the globe. Murder, slave labor, technology, giant corporations, and environmental change will be explored along with art, music, literature, and more. There will be tasting of various international and American craft chocolate as we learn how it is made, how to taste it, and what percentages mean on the wrapping.
