About this course:

This course surveys the history of chocolate from its origins in the Upper Amazon and Mesoamerica to its impact on the world today. We explore its evolution beginning 5000 years ago when cacao was first used to make a chocolate beer 5000 years ago, to when the beans were ground to make a chocolate drink. Moving into the invention of the chocolate bar in 1847, we discuss how technological advances, higher wages for laborers, lower production costs, advertising, new products, two world wars, giant chocolate companies and other forces created a boom in demand for chocolate. We then move into the 21st century with the birth of craft chocolate, the environment as a concern to growers and new markets in Asia and Eastern Europe. Chocolate tastings (craft chocolate and mass-produced chocolate) are offered in each class meeting.
